Raspberry Lemon Sorbet

Good Monday Morning! Today take a step outside of your comfort zone!
I am starting the week off with a sweet treat! I have almost eliminated sugar completely from my diet but occasionally I still want something sweet. I always try to go for as healthy as I can when picking a sweet. I tried to purchase sorbet at the store but realized there was way too many ingredients in the sorbet and some I can’t eat. So I created my own! Keep in mind, everything in moderation! Although this recipe is just sugar and fruit, fruit is sugar too! It is delicious and refreshing! ENJOY!

Raspberry Lemon Sorbet
1/2 cup sugar
1/2 cup water
handful lemon balm (I have this in plenty in my garden, it is optional)
juice from 1 lemon
4 cups raspberries
Bring the water, sugar and lemon balm to a boil, stir, remove from the heat and allow to cool. Place the raspberries and lemon juice in a blender and blend until smooth. Add the cooled sugar water, discard the lemon balm first. Place the mixture in an ice cream maker for 35 minutes. Store in the refrigerator! I love to serve this in a lemon half! For real yummies, add in a few mini chocolate chips when you serve it! MMM Good!
