Today I am sharing a new seafood creation! I really enjoy Scallops! I created this recipe because I wanted to make them easier by baking in the oven. If you have never made them, they are truly easy to make. If you want ideas on how to cook different seafood dishes or something specific, the seafood department at your local grocery store can be a great resource! ENJOY!

Scallops with Rice
Sea Scallops
2 TBSP butter
1 TBSP olive oil
1/2 shallot (for 5 Scallops)
onion powder and garlic powder
Rinse and dry the scallops. Saute the rest of the ingredients until lightly browned, add in the scallops and cook on each side about 2 minutes. Transfer to a greased small baking dish and place in a preheated 400 degree oven. Bake 10 to 15 minutes until done. Serve over a bed of rice mixed with shredded zucchini and shredded parmesan cheese! Delish!
