I recently saw a blog post about the cookbook Sheet Pan Suppers by Molly Gilbert. The blogger posted a Salmon recipe from the cookbook and I made my own version! I began to search recipes and realized how super simple this concept is! I have not seen the cookbook yet but will be looking into it soon! The concept is an entire meal, meat and vegetables all on one pan (a sheet pan). Stay tuned later in the week for another creation of a sheet pan meal! ENJOY!

Salmon Sheet Pan Meal

2 to 4 pounds of Salmon (I usually cut it into 3 to 4 pieces)

asparagus

tomatoes (I use Campari tomatoes cut in half)

onions

lemon

olive oil

sea salt

Place foil on a sheet pan. Add your vegetables (use what you enjoy), sprinkle with salt and drizzle with lemon juice and olive oil. Place your Salmon on top of your veggies and sprinkle with salt, drizzle with olive oil, lemon and butter pats on top. Bake at 425 degrees for 25 minutes until pink and flaky. ENJOY!
