Welcome to Monday! I actually saw and felt sun over the weekend, what a good feeling! I am wishing you a sunny, relaxed week ahead!
I have pulled another recipe out of my old tried and trues to share with you today! I changed it up a bit to add more spice to it! I hope you enjoy it! You can serve it on a roll with or without cheese or over rice with a side salad. ENJOY!

Slow Cooker Pork
a one pound pork tenderloin
1/2 can petite diced tomatoes
1 TBSP brown sugar
1 TBSP Dijon mustard
1 TBSP balsamic vinegar
1 tsp onion powder
1 tsp garlic powder
1/2 tsp red pepper flakes
1/2 tsp black pepper
Place tenderloin in the slow cooker, pour tomatoes on top. Whisk the remaining ingredients together and pour on top of the tomatoes. Cook on high 3 to 4 hours. ENJOY!
