The BEST Oatmeal Cookie

Let your conversation be gracious and attractive so that you will have the right response for everyone. Colossians 4:6

I LOVE this scripture! Wouldn’t the world be more beautiful if we all took this to heart??

This recipe is a MUST try! I found this online from the Golden Barrel molasses company. The taste of these cookies remind me of the Archway cookies! I make them with regular flour as the original recipe but I also make them Gluten Free and according to my taste testers you can not taste the difference! So if you want a slightly healthier cookie make my GF version! Now go to your kitchen and make these, you will be very happy!! ENJOY!

The BEST Oatmeal Cookie (adapted from Golden Barrel Blackstrap Molasses)
1/2 cup butter, room temperature
½ cup brown sugar
¼ cup white sugar
1 egg
1 TBSP molasses
¾ cup oat flour (original recipe is all purpose flour)
1 ½ cup GF rolled oats (original recipe is regular oats)
1 tsp. cinnamon
½ tsp nutmeg
½ tsp baking soda
Pinch of salt
2 tsp arrowroot (original recipe is cornstarch)
Preheat the oven to 350°
Combine the oat flour, oats, cinnamon, nutmeg, baking soda, salt and arrowroot. Set aside.
Cream the butter with the sugars. Add in the egg and molasses. Add in the dry mixture and stir to combine.
Place the cookies on a parchment lined cookie sheet. The original recipe calls for bigger cookies. I do them both ways. If using your big scoop you will get about 10 cookies. Bake for 15 minutes. Let cool on the pan for 1 minute then remove to a wire rack to cool. ENJOY!
