The Hubbard Squash

I am enjoying our Fall temperatures and the beautiful colors outside! One of the things I enjoy about the Fall season is the abundance of unusual looking squash and pumpkins! Many of the squash you see are edible, check when purchasing to be sure. I love decorating with them but I also love to find unique ones for cooking. This year my find is the Hubbard Squash.  I was first drawn to the squash when I saw the color. I then picked it up and my husband said it looked like a bird! Ok now I had to have it, how cool, haha! When we got it home we noticed the other side looked like an owl! LOVE that! see the pictures below! It is usually a fairly large squash, the one I purchased was 16.5 pounds! It has a tough flesh so you need some muscle to cut into this one! The ladies at the farm told me to drop it on the ground to break it up! I enlisted my husband’s help to cut it and we did not drop it on the ground! After cutting it we decided it would roast best with the flesh off so we worked more to get that done. I drizzled the squash with olive oil, salt and pepper then roasted all of it in a 375 degree oven for 40 minutes. I then pureed all of it with chicken broth and froze it to enjoy later! Be adventurous, go out find an unusual squash and roast it! Perhaps you will choose a smaller one than 16.5 pounds! ENJOY!
