Thicker Oatmeal Cookies

I am always trying to perfect a thicker bakery cookie! These are my favorite kinds of cookies, thick and chewy in the middle. A friend of mine shared this recipe she found. It does make a thicker cookie, not as thick as a bakery cookie but close. This one is going in my favorite recipes! Hope you enjoy it as much as I do!

Thicker Oatmeal Cookies

1 stick unsalted butter softened (1/2 cup)

2/3 cup light brown sugar (I add about 1 TBSP more)

1 egg

1 tsp. vanilla

¾ cup flour

½ tsp. baking soda

½ tsp. cinnamon

½ tsp. nutmeg

1 ½ cups old-fashioned oats

Preheat oven to 350 degrees.

Cream together the butter, brown sugar, egg and vanilla until smooth. Mix the flour, baking soda, cinnamon and nutmeg together. Stir this into the butter/sugar mixture. Stir in the oats.

Scoop the cookies onto a baking sheet lined with parchment and then chill the whole tray before baking them. This will give you a thicker cookie.

Bake for 10 to 12 minutes (your baking time will vary, depending on your oven and how cold the cookies were going in), taking them out when golden at the edges but still a little undercooked-looking on top. I had to bake one batch for about 14 minutes. Leave them on the baking sheet for five minutes before transferring them to a rack to cool. ENJOY!
