Turkey Tenderloin

Good Monday Morning! This week schools around the area are starting back! I’m wishing everyone a beautiful week and prayers that we can all get back in the swing of things with a good outlook not allowing the busyness of life to consume us! Take time each day to reflect and relax, even if you can only spare 10 minutes!

Today I am sharing a turkey recipe, it is a good change if you eat a lot of chicken! The turkey tenderloin is not always easy to find. Wegmans always has some type of turkey and this marinade would work on a turkey breast as well. Use what you can find or you can sub out chicken! This would be good for a nice dinner on a busy night if you marinade ahead of time! ENJOY!

Turkey Tenderloin (oops, forgot to take a picture!)

1 garlic clove minced

olive oil (I don’t measure but I use about 1/4 cup)

splash of red wine vinegar

1/4 cup pineapple juice

onion powder

dill

salt

Place your turkey tenderloin in a ziploc bag and add the ingredients. Seal the bag and combine ingredients by shaking the bag. I make this in the morning and let it marinade during the day. Heat 1 TBSP olive oil in a saute pan. Remove the tenderloin from the bag and brown on all sides. Place in a baking dish and bake at 375 degrees for 20 to 30 minutes. ENJOY!
