Vegetable Spread

Please pardon my unexpected break from the blog this week!

Today I am sharing a simple recipe I created. I’m not even sure what to call it, it is similar in texture to a guacamole but not in taste. I make a pea pesto and this is kind of a variety of a pesto, well that is what I had in mind when creating it! It is super simple, very healthy and fresh tasting. I am posting a picture but it truly does not do it justice! ENJOY!

Vegetable Spread

1 cup frozen peas

1/4 onion chopped

lime

1/2 avocado

Place the peas and onion in a bowl and microwave for 2 minutes. Place in a food processor with the avocado and a squeeze of lime, pulse until the consistency of guacamole. ENJOY! You can serve it with toasted bread rounds, tortilla chips or add it to pasta. NOTE: This is best eaten right after you make it. It will still taste fine if you put it in the frig but it will turn color even with the lime.
