Zucchini Pizza

Today’s creation was inspired by my trial of zucchini noodles made without a spiralizer! I have seen wonderful looking noodles made with this kitchen gadget called a spiralizer and I set out to make them without the purchase of another gadget! Oh don’t get me wrong, this cook/baker loves her kitchen tools but I just didn’t want one more thing to find space for! I found a technique using a normal box grater like most of us have in our kitchens. When you lay it on its side with the large holes facing up, you can use it similar to a mandolin! You know those dangerous slicers that can cause big injuries, yikes! You slice the zucchini lengthwise down the grater and fast and easy you have noodles, well kind of! They are not what a sprializer can give you (at least I think since I’ve never used one) but it is a great alternative!

So my daughter and I sautéed our “noodles” in a very small amount of butter with a few spices and just served it as a vegetable side. While eating this I got the idea for this pizza! This new to the gluten-free world chick has been having withdraws from her homemade pizza and I have been trying to create a gluten-free healthy pizza for many weeks now! This is a healthy “veggie” pizza but I’m going to be honest and say while being very delicious, it does not taste like the real deal! Again, it is good and very tasty and I will make this probably once a week now! I truly hope you give this a try, it is very healthy and oh so yummy! ENJOY!

Zucchini Pizza

1 zucchini, sliced on the box grater as mentioned above. After you have your “noodles” place them in a paper towel lined colander and sprinkle with a pinch of salt. Allow them to sit in the frig until you are ready to make the pizzas. This draws the moisture out. Mine sat in the frig for about 1 hour. Take them out of the frig and drizzle with a splash of olive oil and any spices you like. I used seasoned salt and onion powder. Toss to combine and place on a stone or baking sheet in mounds to form mini crusts. Bake at 375 degrees for 30 minutes, the longer they stay in the more crunch they will have, just watch them so they don’t burn. These crusts will not get crunchy enough for you to pick up and eat, you will need a fork. When done, take out of the oven and spread with pizza sauce and sprinkle with you favorite shredded cheese, place back in the oven for 5 minutes. MMM Good!
